This soup is super yummy and is a hearty soup.  My picture doesn’t make the soup look as good as it is so just trust me when I tell you that it is awesome.  The soup is actually a clam chowder but I left out the clams and is very good that way.  I have had it both ways and honesty you can’t really taste the clams.  If you like clams you should add it and if not then leave it out.  Also you don’t have to add as much bacon as it calls for so just put as much in as your heart desires.  I hope you enjoy this Bacon Soup!!

Ingredients:

  • 1 lb. Cooked Bacon Bits (you can also use the precooked bacon bits)
  • 4 cans minced Clams drained
  • 4-5 cups frozen hash potatoes
  • 1 cup chopped celery
  • 1/2 cup shredded carrots
  • 3/4 cup diced onions
  • 4 cups half and half
  • 3-6 Tbsp. flour
  • Salt and Pepper to taste
  • Parsley Flakes to taste

Directions:

Put all the veggies in the pot.  Add enough water to cover all the veggies and cook until they are softened.  Then add half and half, flour, bacon, clams if you are using them, salt and pepper, and parsley flakes.  Cook until thickened.  Enjoy!!
