These red potatoes have been in my husband’s family for years.  They are super easy and are one of our favorite ways to eat potatoes.  My girls are not big mash potato fans but love these.  They are soft, tender and have just the right amount of seasoning on them, making them a great side dish to any meal.

Ingredients:

  • 1 stick butter
  • 6-8 red potatoes
  • salt and pepper

Directions:

Spray a 9×13 inch pan with baking spray.  Preheat oven to 375.  While oven is heating up, place the stick of butter in the bottom of the 9×13 pan and place in the oven.  Allow the stick of butter to melt.  While the butter is melting cut the potatoes in half length wise.  Then cut each half into thin slices, try not to cut all the way down to the bottom.  This will make it so the potato will stay together.  Pull the pan out of the oven and place the potatoes cut side down.  Sprinkle with salt and pepper.  Cook for 45-60 mins. or until potatoes are fork tender.
