These wonderful pumpkin squares have been in my husbands family for years.  You know fall is in the air and that the holiday season is just around the corner when these show up.  This is one of our favorite family cozy comfort foods.  It has just the right amount of pumpkin followed with a delicious streusel topping (which might end up eaten off the top, not that I have done it:).  Serve it warm with sweetened whipped cream, vanilla ice cream, or by itself.  No matter what you will be glad that you made it and not to mention that it will make your house smell amazing!

Ingredients:

*Makes one 9×13 pan
Cake:

  • 1 pkg. yellow cake mix
  • 16 ounces pumpkin
  • 1/2 cup melted butter
  • 5 eggs
  • 2/3 cup milk
  • 1 1/2 cup granulated sugar
  • 1 teaspoon salt
  • 2 teaspoon cinnamon
  • 1 teaspoon ginger
  • 1 teaspoon vanilla

Crumb Topping:

  • 1 cup cake mix
  • 1 teaspoon cinnamon
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/4 cup butter softened

Directions:

Remove 1 cup of dry cake mix and put in a bowl, set aside.  Take the rest of the cake mix and put in another bowl, add 1/2 cup melted butter and 1 egg.  Mix together and spread in a greased 9×13 pan.

In another bowl combine pumpkin, milk, granulated sugar, 4 eggs, salt, cinnamon, ginger and vanilla.  Whisk it all together and pour over the cake mixture in the 9×13 pan.

Take the 1 cup of dry cake mix and add in the cinnamon, granulated sugar, brown sugar and softened butter. Mix until it makes a crumb togging. Put on top and bake at 350 for 1 hr.  Serve warm with sweetened whipped cream, ice cream or by itself.
