This is a perfectly, proportioned pumpkin cake. Try saying that three times fast 🙂 Pumpkin and chocolate combine to make this a savory and sweet treat that can be served as a snack or dessert.  It has just the right amount of pumpkin and spices creating a wonderful addition to your fall dessert collection.

 

Ingredients

  • 2 cups sugar
  • 15 oz. pumpkin
  • 1 cup oil
  • 4 eggs
  • 2 cups of flour
  • 1 tsp. salt
  • 2 tsp. baking soda
  • 2 tsp. baking powder
  • 2 tsp. cinnamon
  • 2 cups chocolate chips

 

Directions

Preheat oven to 350 degrees.

Combine sugar, pumpkin, oil and eggs.  Beat together for 1 minute.  In a separate bowl combine the flour, salt, baking soda, baking powder and cinnamon.   Then mix the dry ingredients to the wet ingredients and mix thoroughly.  Add 1 cup of chocolate chips.  Pour into greased bundt cake pan.  Bake for 55-60 minutes.  Cool 10 minutes and remove from pan.

Melt remaining cup of chocolate chips in the microwave according to the package label.  Add a little milk to make it easier to pour.  Drizzle over cake.
