Cream cheese frosting sandwiched between two chewy chocolate cookies.  What could be better!  These cookies have been around in my family for as long as I can remember.  They are the perfect quick and easy cookie.  Not to mention that they only have three ingredients in them besides the frosting.

Ingredients

  • 1 box Devil’s food cake mix (we like Duncan Hines)
  • 2/3 c. shortening
  • 2 eggs

Cream Cheese Frosting

  • 1 pkg. cream cheese (room temperature)
  • 1 stick butter (room temperature)
  • 1 tsp. vanilla
  • 5 c. powdered sugar
  • coloring for frosting (optional)

Directions

Preheat oven to 350.  Mix shortening and cake mix together with a mixer until all is combined.  Then add eggs one at a time.  Roll into small balls.  You can make them mini or larger, it is your choice.   Place on a lined cookie sheet.  Bake cookies for about 9 minutes.  Let cool slightly on cookie sheet and then transfer to a cooling rack.  Match cookies together and fill with cream cheese frosting.

Place cream cheese and butter in a bowl and mixed until combined.  Slowly add powdered sugar until all is mixed in.  Add vanilla and coloring, mix until all is colored with coloring.  Frost cookies.
