Valentine’s Day Idea #3:  Have you ever had the molten cake at Chili’s?   Well if you have it is pretty much the best cake possible.  I tried it for the first time 3 months ago and decided that I needed to find that recipe.  Well I found it.  This cake is perfect with fudge sauce in the middle.  As soon as you dig into the cake the the yummy goodness runs out.  Unfortunately I don’t have the perfect ramekins for this dish but who cares it still tastes the same.

Ingredients:

  • 10 Tbsp. (1 1/4 stick) butter
  • 8 oz. (1c.) Chocolate Chips (Milk or Semi-Sweet)
  • 1/2 c. Flour
  • 1 1/2 c. Powdered Sugar
  • 3 Large Eggs
  • 3 Egg Yolks
  • 1 tsp. Vanilla

Directions:

Preheat oven to 425 F.  Spray 6 – 6 oz.  ramekins or cupcake tins.  Melt chocolate chips and butter in the microwave for 1 min.  Stir and then in 30 sec. increments until smooth.  Add flour and sugar to the chocolate/butter sauce. Stir in eggs and yolk until smooth. Add vanilla and mix everything until combined. Divide batter evenly among the cups. Place cups on top of a cookie sheet and bake for 10 minutes until the edges are firm. Run a knife around the edges to loosen and invert onto dessert plates or you can serve in cup. For an extra finisher you can add-sprinkle powdered sugar on top, add a dollop of whipped cream or ice cream, add raspberries or strawberries, or any combination above.  Enjoy!!
