Whenever we have bananas that are going ripe I usually end up making banana bread.  There are so many different recipes for banana bread.  I have a few that are my favorite and I will share them with you in the next little bit.  Most recipes that I make have half butter half applesauce but this one has all applesauce.  So if you are looking for a good low-fat comfort food choose this one.  And you can’t have banana bread without chocolate chips.  You can make two small loaves or just one big.  I hope you enjoy it just as much as I do:)

Ingredients:

  • 2 cups all purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 2 eggs, beaten
  • 1 1/2 cups mashed ripe banana (3-5 bananas)
  • 1 cup granulated sugar
  • 1/2 cup applesauce
  • 1/4 cup chopped walnuts (optional)

Directions:

In a medium bowl combine eggs, mashed banana, sugar, and applesauce. Add flour, baking powder, baking soda, salt, cinnamon and nutmeg.  Mix well.  Pour batter into greased pan and bake at 350 degrees for 55 to 60 minutes for one 9x5x3 pan or bake 40-45 minutes for two 7 1/2x 3 1/2x 2 inch pans.
