I wasn’t too sure about these when I first tried them, but they have grown on me. Just imagine lemon bars with more of a brownie texture and voila you have lemon brownies. I have set these out for an afternoon snack, had them for dessert and sprinkled powdered sugar on top and taken them to social functions. A very versatile, delicious treat! Enjoy!
Ingredients
Brownie:
- 3/4 c sugar
- 3/4 c flour
- 1/3 tsp salt
- 1 stick butter at room temperature
- 2 eggs
- Juice from 1/2 lemon
- Zest from 1/2 lemon
Lemon Glaze:
- 1/2 cup powdered sugar
- Juice from 1 lemon
- Zest from 1 lemon
Directions
Cream the butter and the sugar. Beat the eggs with the lemon zest and lemon juice. Add to the butter mixture with a mixer. Add the flour and salt. Spread into pan. Cook at 350 degrees for 25 minutes in a 8 X 8 glass pan, sprayed with Pam. Cool for about 45 minutes.
Cut the brown edges off, and then cut into rectangles. Place on a pan and drizzle with the lemon glaze. Then place on a serving dish.
