These ooey, gooey eyeballs didn’t pass the eyeball test when the girls first saw it as they were a little bit suspect 🙂 Then they saw their Daddy eating them and they decided to give it a try and thought they were pretty good, but more than anything thought they were pretty silly eating Halloween eyeballs!
Ingredients:
- 6 hard boiled eggs (depends on how many eye balls you want to make)
- 2 tablespoon mayo ( or to taste)
- 1 tsp mustard (to taste)
- 1/2 teaspoon red wine vinegar
- salt and pepper to taste
- 6 ritz crackers
- olives sliced
- red food coloring
- toothpicks
Directions:
Peel your hard boiled eggs. Cut eggs in half and remove the yolks. Smash egg yolks together and add in the mayo, mustard, red wine vinegar, salt and pepper. Mix until it is creamy and mix throughly. Once you have made the filling, stuff the inside of the egg whites. Turn the egg upside down and put it on a ritz cracker. The filling acts as a glue. Then add one sliver of the sliced olive on the top of the egg white. Take a toothpick dipped in red food coloring to make the squiggly lines down the side. Chill until ready to serve.
