These cinnamon roasted almonds are terrific and easy. They taste just like the ones you get at the mall or football games.  Yes, football games, my family’s season tickets were right by the stand and the aroma was absolutely delightful and you almost always ended up buying some:) The almonds are coated in a silky cinnamon and sugar coating that is slowly roasted in the oven. These are positively addictive and good for a holiday gift or just for family.  My three year old absolutely loves them!

Ingredients

  • 1 lb. almonds (3 1/2 cups)
  • 1 egg white
  • 1 tsp. vanilla
  • 1/2 c. packed brown sugar
  • 1/2 c. granulated sugar
  • 1/2 tsp. salt
  • 1 tsp. cinnamon

Directions

Preheat oven to 250.  Separate the egg white from the egg yolk and discard the egg yolk.  In a large bowl lightly beat egg white with a fork until frothy.  Add vanilla and mix.  Add almonds and stir together.  Combine dry ingredients in a separate bowl and mix well. Sprinkle sugar mixture over the almonds until evenly coated.  Lightly grease a cookie sheet or use parchment paper. Spread almonds onto cookie sheet so they are in one layer.  Bake in oven for 1 hr. stirring every 20 mins. Take out of oven and let cool to room temperature.  Enjoy!!
