During the holidays I went to lunch at Zupas and got their Chicken Pesto Sandwich.  It was so good that I decided that I needed to try and make it at home.  My version is not the exact same I added some different items and left out some that they had.  The result was absolutely fantastic!  My sweet husband was a little skeptic to try it but was shocked at how good it tasted.  The great thing about making your own panini is that you can add anything you want to it so that it is exactly what you want.

Ingredients

  • 4 – 6 La Brea Bakery Telera Sandwich Roll (these are my favorite for paninis, Costco has them)
  • Fresh spinach
  • 4 -6 slices Cobly Jack cheese
  • 2 chicken breast, cooked, cubed
  • 1 roasted red pepper (I used the ones from the jar), sliced into small cubes
  • 1/4 – 1/2 cup pesto sauce (add according to taste)
  • 1 cup real mayonnaise

Directions

In a bowl, mix together chicken breast, roasted red pepper, basil pesto, and mayo until just combined.

Layer on your telera roll chicken mixture, spinach and then the cheese.  Cook on a panini press until cheese is melted.  Enjoy with your favorite soup or just enjoy!!
