Broccolini is something that we have quickly adopted as one of our favorite vegetables in the last few years. It’s delicious when cooked right and great plain or in addition to another meal which is the case above. The chicken is cooked in a skillet and then smothered with an asiago sauce worthy of dipping, which results in a healthy, delicious and quick dinner time meal.
Ingredients
- 4 chicken breast
- 1 bundle broccolini, trimmed 1 inch of stems
- 2 Tbsp butter
- 1 Tbsp flour
- 1 1/2 c. milk
- 1 c. grated asiago cheese (I have also used sharp cheddar cheese)
- 2 Tbsp olive oil
Directions
Place 2 Tbsp. olive oil into a skillet over medium-high heat. Season the chicken with salt and pepper. Cook chicken in the skillet. While chicken cooks heat 1-inch water over high heat in a small high-sided skillet. Bring water to a boil and add a little salt and broccolini to the water and cook 3 to 4 minutes.
Drain and set broccolini aside. In another pan or small sauce pan heat 2 Tbsp butter over medium heat. Stir in flour and cook for 1 minute. Then slowly add in milk, whisking constantly. Cook until thickened. Add in cheese and season with salt and pepper. Serve chicken topped with broccolini and pour sauce over the top.
