While we were visiting family in Utah my sister had us over for dinner and made this amazing salmon. I knew I needed to get the recipe and make it for my own family. My husband and kids loved it. The marinade has just the right amount of flavors without being overbearing. Note that you do not marinate the salmon very long or your salmon will be over salty.
Ingredients:
- 2 cedar planks
- 1/3 c. vegetable oil
- 1½ tbsp. vinegar
- 1/3 c. soy sauce (I have used lower sodium soy sauce with great results)
- ¼ c. chopped green onion (I have used dehydrated onion if no green onion on hand)
- 1 tbsp. ginger
- 1 tsp. minced garlic
- 4 1bs. Salmon fillet, skin removed (I buy the fresh Costco salmon)
Directions:
Soak cedar planks in water for 4 hours in large bucket. Use a stone to prevent the cedar planks from floating to the top.
In shallow dish combine all ingredients for marinade. Place salmon fillets in marinade for 15-30 minutes. Do not over marinate or the salmon becomes too salty.
Preheat outdoor grill to medium heat. Place the planks on the grate of the grill. Cook the boards three minutes on each side to prevent warping. Place the salmon fillets onto the planks and discard the marinade. Cover and grill for about 20-30 minutes. Fish is done when you can flake it with a fork.
*Check planks periodically while cooking. If you notice that your plank is burning add water to it. When I checked my planks they were both starting to burn so I added water a few times. You can reuse the planks another time if they did not burn too much.
