Buffalo chicken chopped salad is Delicious!  How can you go wrong with buffalo chicken served over a fresh salad.  I added in all of my favorite salad toppings and there you have it.  Please feel free to add in any extra toppings that you like.  I don’t care for any blue cheese flavor, so I used different dressing and cheese.

Ingredients:

Salad:
  • 1 head of lettuce, chopped
  • 1 cup shredded carrots
  • 1/2 cup bacon, chopped
  • 1 cucumber, chopped
  • 1 avocado, diced
  • 1 cup cauliflower rice
  • 1/2 cup cheddar cheese, cubed
  • buffalo chicken recipe here
  • Sweet Baby Rays Buffalo sauce

Dressing:

  • 1 cup ranch dressing
  • 1/4 cup Sweet Baby Rays Buffalo sauce

Directions:

In a large bowl, add lettuce, carrots, bacon, cucumber, avocado and cheese. Mix together.  Add salad to individual bowls. Top each salad with cauliflower rice and about a 1/2 cup of buffalo chicken. This doesn’t really have to be measured out.

Mix together you ranch and buffalo sauce or add in your ranch and drizzle with buffalo sauce or do both. Now you’re ready to enjoy your Buffalo Chicken Chopped Salad!
