Happy St. Patrick’s Day!  I have a few fun green ideas for St. Patrick’s Day.  Let your mind go wild… there are so many different things that you can make green.  Idea #1 – Broccoli Salad.  This broccoli salad is one of my favorite salads.  I got the recipe from my sister and absolutely love it.  It usually appears at family gatherings during the summer, but is great any time of year.

Ingredients:

Salad:

  • 2 Bunches Broccoli chopped
  • 1 medium Red Onion chopped
  • 1/4 c. Crumbled Bacon
  • 1/2 c. Sunflower Seeds
  • 1/2 c. Craisins or Raisins

 

Dressing:

  • 1 c. Mayo (light, regular and fat free all work great)
  • 1/2 tsp. Salt
  • 1/2 c. Sugar
  • 2 Tbsp. Red Wine Vinegar

Directions:

Combine in a large bowl the broccoli, onion, bacon and sunflower seeds.  Set aside.  In a seperate bowl combine the ingredients for the dressing. Pour the dressing over the salad.  Mix together and enjoy!
