 As you already know I love most anything banana!  I am always trying to find different ways to use them up.  This Banana Cake is delicious! It is easy to make, moist and fluffy! To take it over the top you add in some chocolate chips and cream cheese frosting.

 If you have any ripe bananas at your house give it a try.  You will be glad you did!

Ingredients:

Cake:

  • 6 tablespoons unsalted butter
  • 1/4 cup oil
  • 2 Large mashed bananas
  • 1 cup granulated sugar
  • 2 eggs
  • 1 1/2 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 3/4 cups milk
  • 1/3 cup sour cream
  • 1 tablespoon baking powder
  • 2 1/4 cups all purpose flour
  • 1 1/2 cup mini semi sweet chocolate chips (I used normal milk chocolate chips)

Frosting:

  • 3 tablespoons cream cheese (softened)
  • 3 tablespoons unsalted butter (softened)
  • 2-3 tablespoons milk
  • 1 1/2 cup powdered sugar

 Directions:

Preheat oven to 350   In a mixing bowl beat together the butter, oil, banana, and sugar. Add the egg, vanilla and salt and mix well. Add the milk and sour cream until well bended. Carefully mix in the flour and baking powder just until combined. Stir in chocolate chips. Pour into a greased bundt pan and bake for about 40 minutes or until tester comes out clean or with a few crumbs. Allow to cool at least 20 minutes before removing from the pan.

Once the cake has cooled, beat together all frosting ingredients until smooth and creamy. Add more milk if it’s too thick. Spread over the top of the cake, letting it drip down the sides. Cover and refrigerate leftovers.
