Looking for a “healthy” after school snack? These are just what you need.  Thinly sliced apples topped with peanut butter and any of your favorite toppings to create a cookie.  My girls love these apple cookies and so do I. 🙂

Ingredients:

  • 1 apple
  • 1/4 cup peanut butter
  • 1/4 cup almonds, sliced (optional)
  • 1/4 cup walnuts, chopped (optional)
  • 1/4 cup shredded coconut (optional)
  • 1/4 cup chocolate chips or any other kind of chips

Directions:

Slice apple into thing rings and remove core. Spread peanut butter over one side of ring. Top with almonds, walnuts, coconut, chocolate chips and any other toppings you would like.
