Just the name its self is a mouthful! I came across these muffins a while back and the became one of our families favorite muffin recipes. It is one of those muffins that you save for special occasions and maybe only make twice a year. Not that they aren’t good, but because they are not the healthiest muffin in the world. These beauties are made first with a delicious banana muffin base with added chocolate chips. Next they are stuffed with Nutella and finally they are finished off with a streusel topping, putting these muffins over the top.
Directions:
For the streusel topping:
- 3/4 cup brown sugar
- 3/4 plain flour
- 1/4 tsp cinnamon
- 1/4 tsp salt
- 110g cold unsalted butter, chopped
For rest of the muffins:
- 1 and 3/4 cups all purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 3 large bananas, mashed
- 3/4 cup white sugar
- 1 egg
- 1/3 melted butter
- Nutella for filling
- 3/4 cup chocolate chips
Directions:
First, make the streusel topping by mixing the butter and sugar together. Then add the other ingredients and mix until a moist crumble forms. Set aside.
Preheat oven to 350 degrees F and lightly grease 12-muffin pan, or paper line it.
Sift together flour, baking powder, baking soda and salt. Set aside. In another bowl, combine bananas, sugar, egg and melted butter. Fold in flour mixture and mix until smooth. Now is when you add your chocolate chips and fold into mixture.
Fill each muffin liner a third full with batter. Add a handful of streusel topping, and then drop in a LARGE tablespoon of Nutella. Fill the liner the rest of the way up with more batter, and top with another handful of streusel. Keep going for the rest of it.
Bake for 30-40 minutes, until golden. Enjoy!
