Spaghetti squash is one of my favorite squashes. This year we planted some in our garden and have enjoyed it. It is super easy to cook and is amazing with just about any pasta dish.
Ingredients:
- 1 spaghetti squash
- 1 cup of water or more
Directions:
Cut the spaghetti squash in half length wise and place cut-side down in a 9X13-inch baking dish. Pour in about the water. You want the water to just cover the bottom of the pan and the squash and roast at 400 degrees for 40 minutes or so, until a fork can easily pierce the outside of the squash.
