This is one of our families favorite taco soups.  It is loaded with flavor and ingredients.  It is simple to make and is great for any cold winter night.

Ingredients:

  • 1 lb. ground beef
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 can diced tomatoes undrained
  • 1 1/2 cup picante sauce (1 16 ounce bottle)
  • 1 medium green bell pepper, chopped
  • 2 cans beef broth
  • 1 tsp. dried parsley flakes
  • 1 cup uncooked small pasta
  • 2 tsp. chili powder
  • 1 small can V8 juice
  • shredded cheese and tortilla chips

Directions:

In a large saucepan, cook ground beef, onion and garlic until the meat is cooked through.  Drain the meat and add the broth, tomatoes, picante sauce, pasta, green pepper, chili powder, V8 juice and parsley.

Bring to a boil stirring occasionally.  Reduce heat, cover and simmer 10 mins. or until pasta is tender.  Serve with cheese and tortilla chips.
