Strawberries are in season and this is the perfect way to use all those strawberries.  I made this pie and my girls absolutely loved it.  In fact they ate most of it!!  This would make a scrumptious Mother’s Day dessert.   So go ahead and give it a try!

Ingredients:

  • 1 pkg cream cheese, softened (light works great)
  • 1 pint heavy whipping cream
  • 1/2 cup sugar
  • 1 tsp Vanilla
  • 1 lb strawberries, sliced
  • 1 Keebler graham pie crust or this homemade one

Directions:

In a bowl whip the whipping cream until soft peaks form and then slowly add in the sugar.  Mix in the softened cream cheese and vanilla.  Mix until combined.  Pour the filling into the prepared pie crust.  Top with strawberries and refrigerate the pie for at least 1 hr.
