This is our family’s favorite fudge and goes back generations. As you can see in the picture it is packed with marshmallows and my husband always likes to say, “The more marshmallows, the better!” This was the first year I had my oldest, Gentry Ann, help me make it and it was a blast making them together. This is definitely a family tradition that is fun, delicious and one we will continue to look forward to every year.
Ingredients
- 2 cubes of butter or margarine
- 36 oz chocolate chips (semi sweet)
- 16 oz mini marshmallows
- 2 tsp vanilla
- 2 cups chopped nuts (optional)
- 4-½ cups sugar
- 1 large can of evaporated milk
Directions
In a large mixing bowl place butter, chocolate chips, vanilla, chopped nuts and marshmallows. Set aside. In large heavy saucepan pour evaporated milk and sugar. Stir constantly over medium heat until mixture comes to a rolling boil. Then cook an additional 6 – 8 minutes, continuing stirring to prevent burning. Pour over ingredients in mixing bowl and stir like crazy ( I usually like to leave about half the marshmallows out and pour them in a little later when most all the chocolate chips and butter are melted. This makes it so you have chunks of marshmallows throughout. Pour into greased jellyroll pan.
