This delicious recipe comes compliments of my sister.  It is a great meal…healthy, light and packed with flavor.  My kids love rice and they think it’s way too much fun to grab a bag of chips and pour it over their dinner. I would recommend serving it in bowls as it can get a little messy, but it’s worth it 🙂

Ingredients

  • 4-6 frozen chicken breast
  • 1 can campbell’s nacho fiesta soup or nacho soup
  • 1 small jar pace medium salsa
  • 1 cup sour cream

Directions

Place chicken breast in crockpot and cook 4-5 hours.  Once the chicken is cooked shred it and then add the salsa.  Cook for another 1-2 hours.  Then add the sour cream, nacho fiesta soup and cook for an additional 30 mins on low in the crock pot.  Serve over rice and scoop with tortilla chips.
