This is my version of Cafe Rio’s sweet pork, for those who aren’t familiar with Cafe Rio, it is a great mexican place that started in Utah. Most recipes for the pork say to marinade it, but I heard that Cafe Rio actually doesn’t do that, which not only saves me time, it also makes it a lot easier. So all you have to do is throw your pork tenderloin in the crock pot with a little water and cook all day or until you are able to shred it. Mix up the sauce and pour over the shredded pork and cook for a little longer. The trick here is to make sure that you plan ahead and cook the pork all day. When you do this it will be so tender and will just fall apart and be perfect to make salads, taco, burritos or any other yummy idea you come up with.
Ingredients:
- 2 lbs. Pork (I like the pork tenderloin)
- 1 can Coca Cola (not diet)
- 1 can diced Green Chilies
- 3/4 (10oz.) can Red Enchilada Sauce
- 1 cup Brown Sugar
Directions:
Put pork into crock pot with a little water. This helps it to not stick to the bottom of the crock pot. Cook on low for 6-8 hours (or until it shreds easily) or on high 3-5 hours. The best way is to cook it on low all day long. This makes it nice and tender and easy to shred. Shred pork, drain any juices from the crock pot and put the pork back into the crock pot. In a blender blend up coke, green chilies, enchilada sauce and brown sugar. Pour over pork and cook an additional 1-2 hours. on low. Serve any way you like it…salad, taco, burrito, etc.
