So again here is another Cafe Rio recipe. Since I don’t live by a Cafe Rio any more I have found that I can make the same yummy food at home. Cafe Rio’s rice is a white rice but I decided that I wanted to make it with brown rice. I found the perfect recipe for baked brown rice and combined it with the Cafe Rio ingredients and voila it turned out fantastic:)
Ingredients:
- 1 1/2 cups Brown Rice
- 1 1/3 cups Chicken Broth
- 1 cup Water
- 1 tsp. Butter
- 2 cloves Garlic, minced
- 1 tsp. freshly squeezed Lime juice
- Lime Juice Mixture
- 1 Tbsp. freshly squeezed lime juice
- 2 tsp. sugar
- 3 tablespoons fresh chopped cilantro
Directions:
Adjust oven rack to middle position. Preheat oven to 375 degrees. Spread rice in an 8-inch square baking dish. Bring water, chicken broth and butter to a boil, either in a saucepan or in the microwave. Keep an eye on it and take it off heat immediately after it starts boiling. Immediately stir in garlic and lime juice and pour over rice in baking dish. Cover baking dish tightly with 2 layers of foil, or heavy-duty foil. Transfer baking dish to oven and bake rice until tender, about 1 hour. Remove baking dish from oven and uncover. Fluff rice with fork and add the lime juice sugar mixture, then cover dish with kitchen towel and let rice stand for 5 minutes. Uncover and let rice stand 5 minutes longer. Serve immediately.
