This is our family’s favorite way to cook salmon. I got this recipe from my mother-in-law and lightened it up just a little bit. The cooking time really depends on the size of the salmon so I usually start with 30mins and then go from there. The salmon should be light pink and flakes with a fork.
Ingredients:
- 1-2 Lemons sliced
- 1/2 cube of Butter
- Salt and Pepper
- Salmon (I usually get the Atlantic Salmon from Costco)
Directions:
Spray a 9×13″ pan with cooking spray. Put salmon in pan. When I get the salmon from Costco I have to cut the salmon because it is too big. In this case I use a 9×9″ pan too. Take butter and cut into slices and put on salmon. Place the sliced lemons on salmon also. I rotate butter and lemon. Season with salt and pepper. You don’t want the salmon to be covered with the lemon slices this will cause the salmon to be too lemony. Each piece will not have a lemon on it like the picture above. Cover with tin foil. Bake at 400 for 20-50mins. (Again baking time depends on how big the salmon is. The small pan will only take 20-30mins, while the bigger piece will take closer to an hour.)
